MT-Newswatcher -> Window -> Show Full Group List

Find the group you want to subscribe to.

Highlight that group.

I went to that window and saw a bunch of folders with names such as 1a.
So I typed in tom-waits in the space to show "contains", and pressed
enter. Nothing changed.

Sounds like you didn't uncheck the Hierarchical List option.

If Hierarchical List is checked, the Show: popup will be greyed out and
it will only find newsgroups that START with whatever you type. For
example, type "comp" and it'll jump to comp.*.

If Hierarchical List is unchecked, the popup becomes operational,
allowing you to search for newsgroups that contain the typed text, or
don't contain, or start or end with, or that match a regular expression.

The standard Find and Find Again commands (command-F and command-G) will
also work in the Full Groups List window, regardless of whether
Hierarchical List is checked or unchecked.
