Need help moving from 10.4 to 10.5

There are two main things I don't know how to turn on.

First, how do you create root? NetInfoManager seems to be gone. I need
an actual login for root to do backups. Well, I guess I could do it as
the user/admin, but I prefer to su when necessary and to log on as root
when I have to do system stuff.

Second, how do you turn on local mail? I am told it is very different
from 10.4 but I don't know how. In 10.4 I had to tweek postfix and add
qpopper. Can I transfer that stuff or do I have to do something else?

I hope somebody has the answer to this.
