DevonThink seems to be a good program and would likely fit your needs.
Try the demo products to get a feel for using the program first.
I have used the PE versions and recently the Pro versions for a year or
so. Both seem fine.
I am uncomfortable with any application that stores data in a
proprietary format that can't be directly read by other applications.
(in the event of major crash, or the publishing company going out of
business, program being orphaned, etc). So having a large amount of data
in a DevonThink single file is not particularly attractive to me. But
since I faithfully run CHECK FOR ERRORS and set BACKUP daily, I do have
backup files. The program will also export data (which truthfully, I
have not done since first starting using the program).
I have not lost any data in year or so of daily use.

Glad you like your Mac. I have never really used Windows PC enough to be
comfortable with it, but what I knew /experienced of the Windows world
did not seem attractive. Choosing a product (in this case a Operating
System choice) is a personal choice for most people I should think. I
started with Macs in 1984 and for better or worse it is an invisible
standard to which I compare all others ever since.
I understand it would not be easy to switch platforms and buy lots of
new software. You will find many fine and excellent shareware products
for the Mac that rival or exceed many more expensive commercial products.
