encryption? Would I get more speed by going unsecure? Would that be
security suicide? Or should I be getting more speed anyway?

WiFi can be very slow.
Run iStumbler with your access point off to make sure there aren't other
signals on a similar channel. Get as far away from adjacent WiFi
signals as possible.
The OS can matter a lot for high-latency connections like WiFi. 10.5
should be able to tune itself. 10.4 needs a patch from Apple to adjust
the default settings. (Bandwidth Tuner?)
