To start, you have Apple's free Xcode software development environment,
which is based on GCC:

And then you have a slew of other Apple-supported tools:

Not to mention the entire GCC command-line compiler ecosystem, with many
compilers and many languages (including fortran, I believe), and a
variety of Mac compiler offerings from IBM, Intel, and so on.
Mac OS X has more software development tools available today than any
previous version of Mac OS.
BTW, you'll likely get a better response to Mac programing questions in
one of the comp.sys.mac.programmer.* news groups.
