In Microsoft Entourage, there is a setting called "Reply to message in
the format in which they were sent". If you clear that checkbox, and
Entourage is set to use Plain Text for new messages, Entourage will
never use HTML. Are you sure there is no such checkbox in Mail?
I also find it annoying that Mail.app refers to HTML as "Rich Text". I
would not so strongly object to mail composition in text/enriched (which
is NOT rtf), but HTML mail is well beyond the pale.
Yes, I find that annoying as well. It's misleading at best, dishonest at
worst.
