Contacts are easy, calendar is really hard.
Contacts: In Now Contact, File.. Synchronize.. With Address Book.
This is a good way to get your contacts into your iPhone.
I called Now Software's support and got good help from someone with
knowledge and skills. They told me, for the calendar, some people have
output a pdf and then read it into the other program. Nighthawk is
their next generation product and may import from Up-to-Date and sync
with Calendar.

Thanks for the hint on transferring Contact's data. Yes, that ability
to transfer data from Contact to Address Book is built in. I have not
tried it yet, but that should take care of that problem.
The remaining battle is getting Calendar data out of Now Up To Date to
iCal.

This is actually not hard to do as a one-time thing if you have a Palm-
based PDA. Sync whatever events you wish to transfer over to iCal to
your Palm using the Now Up-to-Date conduit. Then sync using Apple's
iSync Conduit. Viola! Done! Sorry, you can't use this method to KEEP
iCal and NUD synced; the NUD conduit will complain, and you'll have to
overwrite the events on your Palm with those on your Mac. But at least
you can switch to iCal if you want. Hopefully Nighthawk will fix this.
