Starting "clean" in iDVD

I am trying to start a new iDVD program but I can't figure out how to
get a blank slate, as it were. Even clicking on new and changing the
name of the file I still get the same theme and that &*&^%$%%^&^&^
clarinet piece repeating over and over and over.
I have been through the help files and either did not ask the
right question or did not get an answer.
Basically, I have some things I have written that were produced in
AVI, MPG, etc depending on the client that I would like to convert to
"regular" DVD as a demonstration piece. I would also like to take a
series of presentations and knit them into a single, fluid, piece (like
pre-op, during-op, post-op and when home). Will iDVD do that? If not,
suggestions?
Probably helping me lose the clarinet so I can root around in the help
w/o wanting to open up a vein would help...
