I would like to lighten the clutter in my dock. Can I put folders there
containing the app aliases? E.g., one folder for MS Office apps; a
folder for photo editing apps; etc.

it and then moving the folder to the dock? If this is the track does it
matter if some apps are OS9 apps and some are OSX?

Already answered, I know, but keep in mind that in-Dock folders only
reduce the clutter of non-running apps while increasing the clutter of
the non-app side of the divider. So every time you want to get at an
app you have to click and look and drag (perhaps multiple times if you
have subfolders), and then its position in the dock gets shifted so you
develop no muscle memory of the operation.
Enter my favored solution: Expose! I never used to use the desktop that
much because all the window clutter made getting at it way too
difficult. But now, everything is a quick F11 away, it all stays where
I left it, and I don't have to drive down into folders just to find what
I want. I highly suggest rediscovering your desktop before you start
filling your dock with folders.
