How to Make AudioBook mp3s Bookmarkable for iPod?

I'm trying to figure out how to make large audiobook mp3 files
bookmarkable for use on an iPod mini. I've googled around and seen a
lot of detailed descriptions about how to do this if you are a PC user,
but I'm at a loss as to what to do as a Mac user.

I suspect I'm missing something obvious here... If anyone can give me
some pointers on how to make mp3s bookmarkable, and how to then use
this function on an ipod mini, I'd be very grateful!
