My last transfer went from a 9600 to a mini. But I only had nine gigs
total capacity. I realized a 'bunch' of stuff wasn't nearly as important
as I once thought it was and burned few CD's transferring the stuff
after buying a CD burner. I'm certain that wasn't the most elegant
solution. Nevertheless, It's pretty cheap if you don't have too many
gigs and don't have to buy a damned burner like I did.

Too complicated for me, but perhaps just the ticket.

Providing your HD in the G3 'is not' SCSI, that'd be a simple solution.
You'd have to buy a PCI SCSI card otherwise which isn't particularly
expensive if I remember right. On the other hand, I couldn't jam one
into the mini.
There is probably a very easy ethernet solution requiring a wire and
file sharing that I'm not familiar with.
