Hard Disk Crash on Fujitsu Amilo D1845 (Windows XP Home Edition)

I recently had my hard disk crash on my laptop, I took my laptop to my
local PC doctor but unfortunately he couldn't salvage any information
so I lost the lot, s/w and data (apart from a data back up from a
month ago). Since I got my machine back it has been running really
slowly and occasionally the screen "sticks" for 10 - 15 seconds at
time when running graphics. On looking at the configuration I notice
that the memory is now only 256Mb, before the new hard disk was fitted
it was 512Mb, does anyone know what might have happened here, how can
I check that I really only do have 256MB now? Is this something that
my PC man has done incorrectly?
I lost my valid copy of MS Office 2003 so I now only have Office 2000
minus Powerpoint and Projects. The one issue that I now have is trying
to remember how to use Outlook to access my Hotmail and BT Internet
mail accounts (receive and send) exactly as i was using it before, can
anyone point me in the right direction for assistance in setting this,
the info that I have found on searching the internet has not proved
useful.
Is it possible to salvage anything on my old hard disk, specifically
my 2 years worth of e-mails (and folders), are there companies that
can do this?
I am in the UK.
