Ok I back up a 500MB drive I never timed it. But according to CDWriter it
takes 1 hour to make the image, then 45 minutes to burn it at x2

Is this really a matter of speed? What I mean is that if the DVD burner
is not too old it should have some kind of burnproof mechanism, ensuring
that buffer overflows and low data transfer rates do not negatively
affect the result. Of course if the transfer rate is low burning a DVD
will need quite a lot of time, but technically it should be possible.
How about installing a DVD-writer (with burnproof technology), but
using it only to write to CDs (as surely that won't take forever and
that a CD-R is likely more than enough for backing up whatever is on
the hard drive), but having the ability to read DVDs as I use DVDs on
my Mac to store things on, and it would be nice to be able to read the
occasional file from those CDs on the Atari as well instead of having
to burn the file to a CD-R again, or transferring it to a floppy disk.
How well does a normal ST (or Mega STe) write to CD-R/W anyway?
For example, backing up a 540 MB hard drive to a single CD-R? Would it
take forever and put a lot of strain and be possible cause of burn
problems, or would it work fine?
