Without 3.5 drives (you'll want 2 of them to run anything "modern") and a mass storage device (Microdrive, CFFA, hard disk), you're losing out on pretty much everything a GS has to offer. You'll be stuck with nothing more than a fast IIe.
GS system disks, depending on version, span multiple 3.5 disks. Where to get system disks, either for download or purchase, are in the FAQs.
I also recommend you get at least a 4MB RAM card like the one available from GSE-Reactive.com because you'll need it if you want to run the latest system (6.0.1) and any of the more serious and interesting applications.
If your GS is just for playing games, then the 768K-1.25MB you have is probably enough. You didn't mention which ROM version it was, though it sounds like you have a 00 or a 01.
