You are in danger of confusing two different forms of file sharing.

Native Unix systems use the NFS protocol, and Sunfish is a RISC OS
client for that.

You can also set up CIFS on Linux/Unix, which is a server for the
microsoft SMB protocol. Lanman and Lanman98 are clients for that.

* NFS - it is easy to set up the Linux end, but a tad fiddly to get
the RISC OS end working.

* SMB/CIFS - it is easy to set up the RISC OS end, but fiddly to set
up the Linux end.

In both cases you will need to get to grips with Unix/Linux users,
which are identified both by name, and a pair of numbers called User
ID and Group ID (UID and GID). NFS uses these numbers to determine
your access.

There is a variation called PCNFS, which allows PC usernames to be
used for access. It is probably easier to handle from RISC OS.

I would be very grateful to know whether I need to get 'LanMan98' or
should it be possible to use 'LanMan' or 'Sunfish' as the client?

I managed to set up 'Samba' as the server to share files from the
Iyonix to the Ubuntu machine, but it won't let me copy files in the
other direction, which I really need.
