How does knowing that an email program has "opened" an email help you?

It helps me just as much as knowing that a registered letter has been
signed for.

I find the letter analagy unhelpful. Since you've not answered the
question directly, I'll take your answer to mean "not at all". ;)

OK, I'll answer it. When I send an important or valuable letter or
packet, I want to be reasonably sure it is received by the intended
recipient. Sending it by a form of delivery that requires a signed
receipt offers the best security, even though it has drawbacks as
we've already discussed.

The act of opening an email strongly implies a desire to read it.
There would be little point in opening it otherwise. Therefore a
receipt strongly implies that it has been read. If someone other than
the intended recipient reads it, there is a reasonable assumption that
they are authorised to do so and will therefore take any necessary
action. I would in any case normally only send important email to
trustworthy recipients.

So a receipt, while not an absolute guarantee, gives me more peace of
mind than not having any confirmation at all.

Or as Oscar Wilde might have put it: there is only one thing worse
than receiving a receipt, and that is not receiving a receipt.
