Good book on speech and the human voice



Hi. Could anyone please recommend a book that describes human speech,
more in terms of the "signal" produced by spoken and/or sung human
speech than the biological means by which it is produced. Sort of
"everything you wanted to know about speech but were afraid to ask".
I'm interested in a variety of applications including pitch detection
and analysis/resynthesis of speech.
