Maybe try MathType. It's what Equation Editor was based on, but has more GUI driven functions, and also allows direct TeX entries:

The notebooks in Mathematica and Maple both accept/display LaTeX, and I have used Mathematica from time to time to typeset equations as I derive them, but it helps to be already familiar with the TeX commands.

LyX might be another LaTeX option:

Finally, you can always try html tex, or play around with MathML

From what you've described, I'm guessing MathType inside a MS Word doc would suit you best. (If you still find this unintuitive, perhaps a tutorial would help: <http://www.youtube.com/user/wyandersen#play/uploads/16/pegDm3gjZJ8>.) Regardless, I don't think you'll find what you need inside MATLAB.

The equation editor in Microsoft Word is the type of program I am looking for. However, it is not the most intuitive or easy to use. If you can suggest a similar program I would appreciate it. Again, I only need a program for typing in and formatting equations, not for solving them.
