Belligerent uitable Prop. Inspector in GUIDE

Not sure if this is a GUIDE problem, a Property Inspector
problem, or a noob problem, but I can't get the Property
Inpector to stop creating a ButtonDownFcn and a CreateFcn in
a uitable object in a gui of mine.
Any click in the right column of the ButtonDownFcn (which I
do not want), CreateFcn (which I do not want), or
CellEditFcn (which I DO want) lines feeds me back to the
source file at the callback or a newly-created callback if I
had previously deleted it. I cannot edit the property line
at all (no pencil icon to the right). I haven't wanted to
try the other function-call properties.
ALSO in a possibly related issue, the special edit tools for
the Column properties (like ColumnName, ColumnFormat, etc)
somehow changed to Array Edit tools. There used to be a
decent tool for setting column format and such (RowName,
too) and it's just not there anymore.
Any ideas what I messed up?
(XP Pro SP2 Stock, 2008a)
