Using Fill over contour plots

Hi I am trying to contour plot tidal co phase and
amplitude lines in the Irish Sea and then plot the
coastline and the use FILL to mask out the land. However
this works when I contour one of the sets of data but not
both. When I have two contour plots the contours appear
over the top of where the Fill function should have
blanked them out. Any help on how to fix this and make
the Filled plot the 'top layer' would be greatly
appreciated.
