Curve fitting an image

Hi everyone,

I'm looking to curve fit a greyscale image. Ideally I would
use x,y, and xy as parameters for the curve fit. The curve
fit toolbox looks like it only works in 1-D....what might be
the best way to curve fit my images?

PS: I would also like the residuals from different powers of
curve fitting that I throw at the problem.
