Workstation recommendations

I am working on a project that will be largely implemented in Matlab,
and has some fairly heavy computing and image processing
requirements.
I need to spec out a workstation and get an order going ASAP, so I am
looking for suggestions from the Matlab community.
The system, at a minimum, needs to:
Accept data input from multiple sensors (some digital data streams,
some from camera sources), via Ethernet, at rates from 1 Hz to 1 kHz.
Perform computations (mostly matrix multiplies and digital filtering)
on those data and drive multiple (hundreds) actuators at rates up to
20 Hz.
Log input and output data to local or networked mass storage.
At low rates (usually considerably less than 1 Hz), acquire a multi-
megapixel image from an industrial camera.
Perform various image restoration and enhancement operations.
Drive a large, high-resolution display (ideally, 2560x1600 px or
larger, DVI dual-link).
Log raw and processed image data to mass storage.
I am considering various 64-bit Intel or AMD workstations, possibly
intended for image and/or video editing applications. Minimum of 2 to
4 GB DDR RAM, and 250 GB to 1 TB HDD.
Dual core? Quad core? Are there real advantages for this type of
application?
