OK, I think I've got this sorted now, so I'll summarise for future
reference:
To create a shortcut to Matlab on a KDE desktop:
1. Right click on the desktop, then click Create New/Shortcut....
2. Use the Wizard to locate the Matlab executable in
/usr/local/matlab72/bin/
3. Right click the shortcut on the desktop and click Properties, then:
(a) Click Execute and append -desktop to the command line
(b) Click General, double click the icon and browse for the Matlab
icon.
Now, when you double click the Matlab icon on the desktop, Matlab will
open without locking a Console window.
