My printer is an Epson 1280. The print does not come out as pictured
in the preview window of Print With Preview. In fact, it comes out
not
only off-center, but with far more white space surrounding it than
the
preview window indicates and what I expected. Everything else is
fine: color rendition,
etc.

Not sure about your Epson 1280. With my 880 you have to go into printer properties and set "centred" on the paper tab. You can also set print area "maximised" to reduce white space: there are dire warnings not to do this with photo paper but I have never had a problem.
