A further thought here is that the app in use may have decided that the Default System printer is the correct driver - is the i850 the Default? - regardless of printer selected. What app is involved?
At 1 point in time Mozilla (suite) used to confuse which printer used which driver.
I had 2 printer objects 1 * Canon iP4000 using the i850 driver and 1 * i950 for OO using the i950 driver. The iP4000 was the Default printer and Mozilla used to successfully understand that bit but then insist the driver in use was the i950.

As a way around this, would it be possible to import Cups' PPD file for the
Canon IP4000 into the Pscript driver?

Yes, it is possible to import Cups' PPD file for the Canon IP4000 into the Pscript driver - but that alone would not make a PS printer of the iP4000.
Having successfully imported the ppd file you would need to create a printer object for the printer with the output port set to eCUPS which would then pass the print job onto the installed CUPS port and finally to the printer.
Yes, it all works - but only for some apps; and then only Page1 of a document gets printed. Hopefully the next release will see some improvements in the CUPS port to make it more usable.
Why is CUPS needed? - the answer is simply that the iP4000 is not a PS printer and to make it behave like 1 requires various filters as well as a ppd file.
