I've seen one module that lets you control the fans and/or give
temperature read outs.

If you only want to read the temperature, your lowest cost option is to
go to a hardware store or Radio Shack and ask for a "indoor/outdoor digital
thermometer". There are several models around. They have two digital LCD
temperature displays. One sensor is mounted in the display unit, the other
is attached by a length of wire. You'd usually mount it by a window and run
the wire out between the window and the frame, but for your purposes you can
mount it on the case and run the sensor wire in through the cover or through
one of the adapter slots in the back. Position it near the CPU, that's
usually the hottest area of the case. Then just note the difference between
the inside and outside temperatures, lower is better.

The advantage of using such a device over the usual motherboard-mounted
sensor is that you can move the sensor around inside the case to find spots
of stagnant air where the fans aren't reaching. The biggest difference with
building your own machine compared with a Dell or HP etc is that the big
manufacturers can do proper airflow analysis. Many of their desktop systems
only have one fan, on the power supply, and properly designed ducting and
parts placement to ensure that the air in the case flows over all the items
to be cooled. I've seen homebrewed machines with up to 5 fans that still
have heat problems because the air isn't flowing where it's needed.
