If you want shell access to a well-run mail server, go to
panix.com. You will pay $10 per month for shell access and
200MB storage. There is no bandwidth restriction for mail,
only for web server usage. They have some facilities for
domain hosting, but unless you are prepared to spend a lot
of time maintaining your system, you are probably better off
just getting a separate webhost and not bothering with email
on it.

Yes, you can get much more space etc running your own server
somewhere, but you have to keep the machine running and
secure yourself, and all the apps installed and updated. If
you feel competent to do that and think the time is worth
it, then by all means go ahead. At panix you pay other
highly competent people to do it for you, so you know your
mail always arrives, and if there is a problem someone else
fixes it for you quickly. Procmail, spamassassin,
bogofilter, etc is available for those who want it. Panix
has a lot of users who run their own servers somewhere else,
but still use panix for mail for the peace of mind. There
is also a strong user community to help you get set up.

If you need to stock more than 200MB of mail, then get an
account at fastmail for $20 / year in addition to the panix
account. You can save mail to it from the panix shell using
pine. Your total cost, if you pay by the year, is $120 per
year, for shell access and 800MB total storage. For $140
per year, you can get more storage at fastmail, bringing
your total possible storage to over 2GB, all accessible by
shell.

This is the best solution I have found for unix shell email.
I have no relation to panix or fastmail other than as a
satisfied customer.
