This is what I use them for, though this is a pretty weak example.
Say I have a String Constant that I want to be "Windows OS" or "OSX"
depending on which operating the program is compiled for, I then add
"Windows OS" and change the platform to Windows and add "OSX" and change the
platform to Mac, and don't have a default and it will use the proper
constant depending on the OS.
And if I wanted it to say one thing in English and another thing in French
I'd add it twice and change the languages.
But honestly I really don't understand your question.
In the OS column, I believe the word 'default' refers to the String not to
the operating system so if you have a value default in the OS column, it
just uses that string reguardless of the OS Same with the language.
