The subject pretty much says it all. What are the most widely used browsers
for Apple/Macintosh and what percentage of the Mac market do they have?

Safari (because it is the default) and Firefox (handy extensions and ad
blocking) would probably between them be at least 90% With both Safari
and Firefox pushing automatic updates, most of them would also be fairly
recent releases. Opera is also available. There are several Mac specific
browsers with small shares.

I know that IE5.5 and Safari are used on Apples and Macs but I have no idea
which of these is the most popular or if other browsers far outstrip them in
use.

IE5.5 is no longer supported and has not been available for years. It
was never available on Intel based Mac, which have now outsold non-Intel
models. Anyone still using it would be aware of the potential for
problems on some web sites. It was very nice in its day.

Also, if I test a website in the Windows version of Safari, can I be sure
that it will work exactly the same way in the Mac version of Safari??

Close enough.

You are not considering some pixel precise site are you? If your pages
are valid HTML 4.01 Strict, styled with CSS, and can cope with different
user selected font sizes, you probably only need to test Firefox and
Safari.

After these standard browsers are fine, you can retrofit all the changes
needed to make different versions of IE work, and see if it broke
something in a standard browser. Conditional comments are your friend
for IE, using browser bugs is not.
