Does anyone have an idea of how I could get my software to
unlock itself despite the fact that the authentication server
seems to be permanently inaccessible?

I'm not sure if the above info is enough or if the downloaded
version will again try to access their servers. There is a link

You can create a help ticket there, but as you noted, the page
seems somewhat out of date. You could try doing a search for
abandonware, but most of those types of sites specialize in
games.

I've got a lot invested in this software and I'd like to be
able to keep using it.

It may be time to make the switch to a more current editor,
regardless of your investment. Sometimes it just isn't worth
sticking with a piece of software, especially when you begin to
feel as if you are the only user left. (I'm not suggesting you
are the only Hot Dog Pro user out there; just that you might be
feeling that way.)

There are several excellent free programs available with large
user communities in active development.

jEdit
Notepad++
Arachnophilia
Nvu

jEdit and Arachnophilia are Java programs and Nvu is Mozilla
based. I believe they all support macros and templates. If that
is what you mean by having a lot invested in Hot Dog Pro, well,
there won't be any easy way around recoding all of that stuff
again. But it should at least be possible.
