"make uninstall" should work, though I have not tested it.
But I don't think there are any files that would conflict.
I have identified the gnuplot binary in /usr/local/bin, but are there
some additional library files that might collide with the Fink library?
Only you would know. Did you install other libraries from source as
part of preparing for the gnuplot installation? Normally the gnuplot
configuration script simply works with whatever libraries it finds
already installed.
And how much disk space do they consume approximately (gnuplot itself
has only about 2 MB which looks rather small to me).
