and do some minor editing of the levels. What I'm wondering is if
there's any reason to choose UFRaw over GIMP, or vice versa, for
functionality that is present in both programs. Is there any benefit
to correcting levels or exposure in UFRaw?

If you are using Linux try digiKam. It works very well with 16-bit
images.
