Cable Substitution Question

Hello All,
Have a client who is wiring desks in a hearing room for real-time
transcription feeds. The RT feeds are simple serial data, and when you buy
the basic "mobile" hardware it uses flat six-conductor cable, wired straight
through, to RJ-11 or RJ-12 ends.
Does anyone see any problems from using Cat5 cable to carry this signal?
