Perhaps someone can give you the exact steps for Access 2007.

In Access 2003 and earlier, on the menu File | Get External Data | and
choose either Link or Import, then follow the prompts. I'm not sure there's
direct support for the very latest versions of Paradox, but for many
previous versions you can bring in or link to, and use as-is, where-is
Paradox tables.

My guess is that, in Access 2007, you start with the big round button in the
upper left of the Access screen, and that very few steps will lead you to
Get External Data... I hope that someone who's used Access 2007 a lot more
than I have, though, will step in and give you details.
