Unles the plug-in, etc. can pick which software to use, all of these
will still use the system's default email application.
SMTP-based e-mail plug-ins do not rely on your local mail client. They send the message directly to the mail server. Of course this also means that your outgoing e-mail wont be stored in your mail client's Sent Items folder. If this is an issue you can BCC yourself and create a rule to move it when it comes in.
