I had an excellent experience at Prime in Bellagio. Good food, VERY upscale.
I was a part of a business dinner, so I wasn't paying (which may have made
it better...) :)

Me and the boys go out to Vegas once a year and we usually like to do
one or two dinners at a nice restaurant. It's a lot of money to spend,
I know, but it is only once a year and Vegas does have some of the
nicest restaurants in the U.S. Just to give you an idea of restaurants
we have visited in the past:
Postrio at the Venetian
Nine at the Palms
Smith and Wollensky
Spargo
Olives at the Bellagio
Aqua
Does anyone have any recommendations? I'm not looking for a specific
type of restaurant (seafood, Italian, steak house etc). We're pretty
open to anything. Just want to know if anyone has any restaurants
they've enjoyed (and ones to avoid). When shelling out that kind of
$$$ for food, you hate to go to a place that turns out to be just ok.
Thanks
Spence
