Don- Your book is incorrect, send it back to the editor. Tips are not free money. As stated in an earlier reply, servers pay about income tax on about 8% of thier sales in a given year. The IRS assumes that there will be a tip of X % and wants thier money accordingly.
It isnt free for the server, hes paying taxes on that thing.
Ive been the business for 20 years, and yes I have seen a server/waiter go after a table for a bad tip, or one they thought was under tipping. Ive also seen that exact same person fired about 30 seconds later. Its happend twice.
Severs are always complaining about thier tips, always not enough. I always ask if the service was dead set perfect, timing was perfect, ect. In other words, did you really earn a bigger tip than they left? In most cases I would say no, but there are cheapskates out there who just refuse to tip properly and according to the level of service.
The real problem is of course the level of quality and disparity in restaurants. Example: Steak house at Bellagio vs. Joes coffee shop. Provided all things are equal exept the individual prices, does the steak house server really deserve 80$ tip on 400 bucks and the coffee shop 8 bucks for 40? I doubt it, but thats the world we live in.
