By "vegan" I take it you mean 100% vegetarian, unlike your S.O.,
She doesn't eat anything that involves the death of any animal.
That seems a very reasonable ethical postion to me, and worthy of
respect, although it's not one I personally share.
But...but...did you have any problem with my use of "100% vegetarian,"
as that was the whole point of this thread?
Having started it, I think the point of the thread was whether *food*
could ever be considered partly vegetarian - ie suitable for a
vegetarian diet - not whether people can define themsleves as being
more or less vegetarian, which at the end of the day is really a matter
of personal choice. My point was that once food contained any meat
product at all, it ceased to be veggie, so Marmite's claim to be 100%
vegetarian doesn't make sense - it either is vegetarian or it isn't.
However, a vegetarian is a vegetarian and a vegan is a vegan. A vegan
isn't *more* vegetarian than a veggie, they just have a different
regime, there aren't degrees of this. Somebody who gets holier than
thou about animal welfare, comes round your house and says stuff like
"I'm 99% vegetarian except I eat fish. And chicken. And red meat when
there's no alternative" isn't either, and is 0% of nothing. Here's the
British Vegetarian Society's definitions, from

"Definitions
A vegetarian is someone living on a diet of grains, pulses, nuts,
seeds, vegetables and fruits with or without the use of dairy products
and eggs.
A vegetarian does not eat any meat, poultry, game, fish, shellfish or
crustacea, or slaughter by-products.
Types of Vegetarian
Lacto-ovo-vegetarian. Eats both dairy products and eggs. This is the
most common type of vegetarian diet.
Lacto-vegetarian. Eats dairy products but not eggs.
Vegan. Does not eat dairy products, eggs, or any other animal product."
