even though until just now I'd completely forgotten. I'll have to

I don't have a recipe at all, and, as I said, the ones my mother made were not authentic. She used the beef which she had used to make stock for the weekend soup. She shredded it - it was cooked so well that it just came apart with a fork. She added a little chopped onion (another non-authentic touch). Then she worked in enough chopped cooked potato to make a stiff mixture. She added lots of Maggi seasoning (nothing else would do), and a little egg to bind it together.

The croquettes were rolled in flour, then in egg, and then in breadcrumbs, and deep-fried in beef dripping.

We didn't have them very often, as it was a lot of work, and they had to be eaten right away when they were cooked. My mother usually made them to serve at her New Year's Eve party, and people would stand in the kitchen waiting to snatch them up, too hot to eat. She rarely got to eat even one herself.

I have only tried to make them once or twice, and the taste is good, but I can never get the texture quite right.
