I think that "cooking" is a job that most housekeepers have to do,
on
schedule, and with precious little in the way of appreciation for
any
changes in a menu or a recipe that they choose to make. Planning,
and
shopping and cleaning up are further repetitive thankless chores.
Baking, on the other hand, whether it be casseroles or cakes and
pastries, are done for special family occasions, or else for church
dinners and funerals, etc. In those cases, the housekeeper gets to
dress up and get rewarding feedback from friends and strangers.
They
can improvise and show off their skills. They can live on that kind
of
fantasy for quite a while. Those are gifts they can give instead
of
drudgery of "the everyday housewife". Now, what was that song?

Interesting question here: are casseroles baking? They are baked,
to be
sure, but so are roasts nowadays (and for the past century or two).


Not to my mind.

Baked chicken, baked potatoes, baked Alaska. What the hell is the
difference? Some baked desserts, especially in summertime, are "set" in
the refrigerator, and not baked at all.

Too much heat in the house from baking. Nice if one has an outdoor oven
that one can leave untended all night long.
