After a while she said that she is a great baker and she loves baking

I'm talking about a native speaker of English, who is not a liar, or a
flippant conversationalist.

I thought that cooking encompasses frying, grilling, and whatever else
it takes to prepare food, including baking. Was I wrong in my
assumption?

Yes. They are related activities but not the same at least to someone
in the food service business. Your dinner companion makes perfectly
good sense to me. I'm a trained cook but would never consider calling
myself a baker, even though the bread is rising as I type this.
