Interesting. How, and at what stage of the cooking process, do you
remove the beet's thin cardboardy skin?

After it is cooked. Yes. I don't cook beets often, and I don't take the
trouble to reduce the beet juice. If the juice is cool enough, I take
each beet out manually and lightly squeeze it. The skin slips off
easily, and the beet can be returned to the pan, or put in a bowl ready
for chopping or slicing. Sometimes the inside is hot enough that one
might have to toss the beet from hand to hand, while at other times the
beet can be forked and the skin slipped off manually.
