I got the phrase "Texas horse pee" from my late mother-in-law. Even
though she'd never been to Texas, she /Knew Stuff/.[1] I would never
question her, even now. You shouldn't either.
[1] For example: She knew that buying a chicken (for frying or roasting)
and finding that it had two necks tucked into the cavity did not mean
she was lucky to get the extra neck. Instead, she'd knew she'd been
cheated because the neck wasn't worth as much per pound as the rest of
the bird. That bit of wisdom wouldn't even occur to most of us.
At the sort of time I presume you're talking about, chickens in the
UK were weighed whole, as many types of fish still are. You could
either take it home that way or get the butcher to pull the guts out.
It was in the late 70s when the changeover was made to ready-
eviscerated poultry.
