Similarly for "Alpha, Beta, Gamma", the small set is sensible and
contains my three followed by delta, epsilon. The others are all Greek
letters but not in sequence and have oddly varying case. Again,
growing the set adds sensible values, scrambles the order and adds some
weird ones: "Implied Volatility", "Aacute" (yes, two as), "Ccedil" and
"varpi variation".

That one is explicable. The relevant set must be a version of the
"HTML character entity references", listed at
http://www.w3.org/TR/html4/sgml/entities.html

Well spotted, that explains the odd double letters in aacute and
ccedil. I should have guessed. If eacute and oacute had also shown
up, it would have been more obvious. Just aacute and ccedil made it
look like stuttering. Actually many of the others that I did not
mention could be from the source: aelig, atilde, and maybe thorn. I
don't see varpi in that list though it is plausible as "variant pi".
If so, "varpi variation" is tautological.

There would seem to be another source as well: neutron and X-ray.

Possibly stars. Alpha centauri, beta tauri, X-ray stars, neutron
stars. In which case it isn't distinguishing between *names* of stars
and *categories* of star.
