it's an interesting question. The BrEtc
tradition is to eat pancakes on Shrove Tuesday, but religious
observance is so rare that most people call it "Pancake Day". I think
that's a shame -- like calling Christmas "Goose Day" -- but there it
is.

I've never heard the term "pancake day" used to refer to the day before
Lent. This may be another pond difference, I don't know if other USA
people use that term or not.

I don't quite know why the pancakes, as you'd expect the pre-Lent meal
to be on a Christmas dinner scale if anything. I suppose they may
originally have been a much richer dish than the present tasty but
simple Yorkshire pudding batter.

My recollection is that butter, eggs, and white flour were often given
up during Lent, so it was an attempt to use them up. Or something like
that.
