Yes, one and once are virtually indistinguishable for
many context as you write. At once, I agree!

A couple of curious notions here.
Someone secreted away the " w " in once and
someone secreted away the " r " in colonel.
Sound stealers abound!
Of sincere interest, however, is why do we assign
a meaning "to act immediately" to once? We will
do this, at once. However, we cannot apply this
same rule to twice, thrice and other members
of the adverb numbers.
I am twice absent minded, at once!
I am, at once, absent minded, twice!
I am once absent minded, at twice! Uh oh.
Our "once" is missing a letter and is special, just as
is "colonel" is missing a letter and is special. I suspect
this missing letter and special meaning quandary is
part of a vast conspiracy by linguists.
I believe this sound theft is a result of a joke played by
those ornery Southern plantation owners often called colonel
who, for oddest of reasons, are associated with tasteless
finger licking good chicken, rather than cotton.
Then there are those Mafia lieutenants.
