They are trying to market products in a specific price point where they
persceive that a significant base of buyers will be. Quality is reduced
for reasons that can range from maintaining the better picture quality
of the more expensive models while matching the resolution numbers people
are expecting to compare (e.g. the more expensive model _looks_ better
even if both are 1080) ... to just not using patented technology in the
lower priced models which means a savings in royalty payments.

Which picture _looked_ better to you?
Unfortunately, you're probably looking at the in-store canned content,
which is not usually the best for comparison. Tell the people at the
store that you are ready to buy, and if they can prove that the more
expensive set performs better with a variety of different content that
you would view, then that would be your choice. Then tell them what
you expect to be watching in terms of source: BR/HD-DVD? Satellite?
Cable? Over the air? 720p? 1080i? 1080p24? 1080p60? Ask them to
show you the sets to compare on each source. If they won't, tell them
you'll be shopping somewhere else. If they want to start quoting spec
numbers, tell them if numbers were all that was important, you'd just
buy one online ... you want to _see_ which set performs better on each
type of source.
