I left most of the brochure out where it goes into S-Video, composite,
coaxial F-pin, etc. Sorry I got AVI mixed up with DVI. Anyway, it says
that component is the best hookup after DVI. The best video-only hookup,
I guess.

It is not well worded at all, but it does NOT say that DVI is the best connection. It says component is the best VIDEO connection after DVI. What they mean is that DVI is a better VIDEO connection than S-video and better than composite video (the single yellow cable connection). You left out those parts of the brochure but they are significant to what Walmart was saying and to your misunderstanding.

HDMI gives the best video and audio connection, all in one thin cable. If you can't or won't use an HDMI connection for some reason, than your next best choice is DVI for VIDEO and optical for sound. If you can't or won't use HDMI or DVI than your next best choice is Component for Video and optical for sound. If you can't or won't use HDMI or DVI or component for VIDEO than your best choice is S-video for Video and optical for sound. If you can't or won't use HDMI or DVI or component or s-video for video then than your next best choice is composite video (the single yellow connector) for VIDEO and optical for sound. If you can't or won't use any of those then your last choice is RF input to the antenna connector on your TV.

A simpler way of saying that is that video connections, from best to worst are:
HDMI
DVI
Component
S-video
Composite
RF
.
