I like the concept of learning how to crash. I haven't yet mastered
it on the bike, despite the frequency with which I do so.
One of the things they did remember to teach when I took motorcycle
lessons (they didn't even mention countersteering because Japanese
people grow up on bicycles so it comes as second nature to them anyway)
was that when you realize that you're doomed, the best thing to do is
EJECT! Let the bike come sliding to a halt separate from you. Being
tangled up in your bike while it's Doing Its Own Thing is a good recipe
for broken bones, but if you can fall off a bike properly, you won't be
nearly as badly hurt.
Also, and tying in with the Japanese theme, learn judo (or something
related), so that you can do a safe falling roll, instinctively.
According to the anecdote told by my judo teacher, this once saved one
of his pupil's life when he did eject from a bike.
