With viking sword you probably could re-grind the edge. Katana would
be pretty much scrap metal. So yeah, all hteir defensive techniques
were about ducking and/or slapping opponent's sword with the flat of
the blade. You never blocked with the edge, evah.
Which makes some of the faster deflections (blocking as such is seldom
done with a 2 hander or any sword) not possible.
Some European deflections are done with the flat too, depends on the
style and the situation. But they definitely did use the edge because
it is better skeletally - where your hands are on the grip translates
to how fast and hard and at what angle you can move the weapon.
I haven't seen anyone use a katana in anything but Kendo, and that has
rules that make it a limited style. So no idea how one would go
against an equally skilled longsword fighter.
